01 · The Craft

The Art of Our Broth

Great ramen begins long before the bowl is filled. Our broth rests on a patient fire, where pork bones, chicken, kombu and dried fish slowly give up their depth.

We build flavour in layers: a clear base, a seasoned tare, a fragrant aroma oil. Each step is tasted, adjusted and tasted again, so every spoonful lands rich yet balanced, deeply savoury and gently comforting. It is the kind of warmth that settles you from the very first sip.

  • Slow-simmered over low heat, never rushed
  • Layered with tare, aroma oil and umami stock
  • Rich, balanced and comforting in every bowl
