湯気 Steam, fire and patience

Made slowly, poured with care.

Watch the broth rise, the noodles lift and the bowl come together, the way we do it at the counter every single morning.

  • 18 hours of low simmer
  • Hand-pulled every morning
  • 90 seconds from boil to bowl

技 The craft

The Art of Ramenin five quiet decisions

A great bowl is not one big idea. It is five small decisions, made with the same care every morning, until they taste like one.

  • Broth

Eighteen hours on a low flame, until the bones go quiet.

  • Tare

Aged soy, mirin and sea salt, seasoned in the bowl first.

  • Noodles

Cut to match the broth, never the other way round.

  • Aroma oil

A spoon of black garlic or chilli oil to lift the first sip.

  • Toppings

Placed by hand, in the same order, every time.

From Flame to Bowlthe long road to your table

  1. Stockpot over a low flame
    6 pm, the day before

    The flame is lit

Stockpots go on the low burners. From here, the only ingredient we add is time.

  2. Milky tonkotsu broth
    Overnight

    Bones give up their depth

The broth clouds, thickens and turns from pale gold to cream while the kitchen sleeps.

  3. Toppings and tare being prepared
    Dawn

    Tare and oil are balanced

The seasoning is tasted, adjusted and tasted again. Eggs are marinated, pork is sliced.

  4. Fresh noodles being lifted
    Late morning

    Noodles are cut fresh

The rested dough meets the cutter, and the first batch is portioned for the day.

  5. A finished bowl of ramen
    11:30 am

    The first bowl goes out

Preheated bowl, hot broth, ninety seconds of noodles. Then it is yours.
